Tomato Mozzarella Sliders, they’re cheesy, garlicky, and slightly sweet. I will be making these for the upcoming SuperBowl (Go Chiefs). Sliders have always been an item that I struggle finding vegetarian versions of, so making a delicious and easy vegetarian version was always on the top of my list.
When can I prep my Sliders?
For best tasting sliders and for the best texture, I would prep these the day you’re going to be eating them. Since these sliders are heavy on the tomatoes, they tend to release water pretty quickly. Try not to let these sit for more than 6-8 hours, the bread could get soggy (which no one wants). If you are making these and not baking/serving right away, wait until you’re ready to serve to add the garlic butter. That could lead to the sliders to getting a bit greasy.
What can I add to make these a full meal?
If you are a vegetarian/want these to stay a VG meal, bulk up with some veggies! I think adding spinach, sliced onions, red bell peppers would be great additions to make this more filling. You can even take it a bit further and add some grilled tofu for extra protein. If you do eat meat, adding some sliced or grilled chicken would be good too (I think lol).
What is the best bread to use?
Typically, you will be a lot of slider recipes using sweet Hawaiian rolls, but I would choose a dinner roll. Since tomatoes are slightly sweet and these is balsamic glaze, Hawaiian rolls might be overdoing it, in terms of the sweetness. On a another note, if you’re a Hawaiian roll lover, go for it! I live in Florida and go to Publix, I used the “Water Rolls” from the deli. They are light and airy on the inside, but have a great crust for sliders.
Substitutes
- Pesto: If you don’t like pesto or don’t have it, you can use a Chimichurri type sauce, Ranch, Mayo, a thick Salad dressing.
- Basil: I know there are some basil haters out there, so you can use Parsley instead. If you are opposed to both, you can just add some chopped spinach.
- Balsamic Glaze: I know a common though would be to replace this with Balsamic Vinegar, but that would add a lot of acidity to the sliders. A hot honey or even regular honey would be a great replacement.
- Butter: If you don’t want to use butter, olive oil also works great! I would add a bit of salt to it, since you are replacing a salty butter.

Ingredients
For the Sliders
- 2- 6 Pack Dinner Rolls
- 4 Tomatoes, Sliced
- 1/2 Cup Basil
- 1/2 Cup Pesto
- 8 Slices Mozzarella Cheese
- Balsamic Glaze
- Olive Oil
- Salt
- Black Pepper
For the Garlic Butter
- 2 Tbsp Butter
- 2 Cloves Garlic
- 2 Tbsp Parsley
Instructions

Preheat the oven to 400 F.

Slice the tomatoes and chop the basil.

Keeping the rolls attached to each other, slice each bunch into 2 halves.

Spread pesto on all 4 halves of the rolls.

Evenly distribute the tomatoes on the bottom halves of the rolls.

Top the tomatoes with salt, pepper, balsamic glaze, and olive oil.

Add the chopped basil and mozzarella cheese. Top the rolls.

Melt the butter in a microwave-safe bowl, covered.

Crush the garlic into the melted butter, add the chopped parsley and black pepper.

Brush the tops of the rolls with the garlic butter.

Cover with foil and bake for 15 minutes. Bake uncovered for around 3 minutes.
