As the weather starts to warm up, I need a midday yogi bowl filled to the brim with granola. My honey walnut skillet granola is super quick. It is filled with ingredients you (mostly) have in the pantry.
The amount of times I’ve walked down the granola aisle at the grocery and visibly gawked at the price, is too many to count. I have no idea why store bought granola is so expensive when the ingredients are so simple. My skillet granola recipe is so easy, customizable and I bet you already have most of these ingredients laying around in your pantry.

How to make granola
Ingredients:
- Base: Oats are the most popular, and probably cheapest base for granola. It also toasts up so well! Just try to use Old fashioned oats instead of quick oats. If you’re gluten-free just look for the “gluten-free certified” label on the Oats.
- Binder: My favorite binders are melted coconut oil and melted butter. Both add such a delicious flavor to the granola. You can use olive oil, but that will give off a much stronger flavor.
- Sweetener: I love to use honey, especially for this honey walnut granola recipe, but maple syrup is also delicious. I find a sticky sweetener makes for the best texture.
- Mix-Ins: This is where the granola gets fun! Mix in whatever you like! Do a combination of fun and healthy ingredients.
- Seasonings: I think cinnamon is a more popular seasoning for granola, but I also find nutmeg or even pumpkin pie spice would be amazing. Don’t forget the vanilla extract and pinch of salt!
How to Eat granola
- My ultimate favorite way to eat granola is on top of Greek yogurt or skyr. My favorite yogurt is Siggi’s Icelandic Yogurt! I also like to include fruit like strawberries or mango.
- This recipe toasts up the granola so well it works so amazing as a cereal replacement. Just top it with milk! (I am team cereal then milk)
- I’ve also sprinkled some of this granola on ice cream for the best crunch.

Ingredients
- 1 1/2 Cups Old Fashioned Oats
- 1/2 Cup Walnuts, Chopped
- 1/3 Cup Shredded Coconut, Unsweetened
- 2 Tbsp Hemp Hearts
- 2 Tbsp Chia Seeds
- 1/4 Cup Coconut Oil, Melted
- 1/4 Cup Honey
- 1 Tsp Cinnamon
- 1 Tsp Vanilla Extract
- 1/2 Tsp Salt
Instructions

Combine all of the ingredients in a large mixing bowl. Be sure to mix thoroughly.

Bring a pan to low-medium heat. Then add all of the granola mixture.

Toast on low-medium for 10-15 minutes, mixing frequently.

Remove from heat and add granola to a bowl to allow for cooling down.

Let it cool for 15 minutes, mixing frequently.
