If you love to create recipes that are super simple but delicious and make you question if you’re eating something super elaborate, you’ll love my garlic fried rice I remember growing up and my nani (maternal grandmother) would make the simplest dishes taste so so yummy just by adjusting the aromatics or inclusions. There was this one recipe where she made an Aloo toastie and added Taco Bell sauce and I was obsessed. It’s truly the simplest ingredients that make a recipe great.
This simple and easy garlic fried rice is filled with so much flavor from the fried garlic, basil and scallions. I love how the garlic infused oil adds such a punch to the dish without adding extra ingredients. I think this recipe just shows how important fresh ingredients are to make a dish so tasty. Though I usually say that you can make any recipe your own by changing ingredients, I would recommend keeping this one just as is! If your a garlic girl like me, this is the perfect side dish!
How to make garlic fried rice
- Use day old Jasmine rice! I’m hoping you see this recipe just 1 day in advance so you prep the rice.
- Fun Fact: When you use fresh rice for fried rice, the rice has the soft starches that could lead to a mushy fried rice. When you use day old rice, it keeps its integrity!
- Fry your minced garlic until the small pieces are dark brown and the bigger pieces are golden brown. This will make sure you don’t get a burnt taste in your fried rice. Make sure you keep your garlic oil!! This will add loads of flavor to the fried rice.
- After you remove the fried garlic, add the white of the scallions right into the hot infused garlic oil. You just want to cook these until they are soft.
- Add the day old jasmine rice and a splash of your favorite soy sauce! Mine is the Kikkoman Less Sodium Soy Sauce.
- Toss back your fried garlic and a handful (or 2) of fresh basil. Thai basil is the best if you can get your hands on it.
- Give everything a good toss and garnish with the rest of your scallions!

- Air-fried Crumbled Tofu (Crumble with your hands, add soy sauce and garlic powder)
- Garlic Soy Shrimp or Chicken
- Add eggs into the fried rice

- Sautéed Mushrooms

Ingredients
- 3 Cups Cooked Day Old Jasmine Rice
- 1 Head Garlic, Peeled & Minced
- 3 Tbsp Avocado Oil
- 3 Stalks Scallion, Minced
- Handful of Fresh Basil
- 2 Tbsp Low Sodium Soy Sauce
Instructions

In a large skillet, heat the avocado oil.

Fry the garlic in the hot oil until the garlic is golden brown and slightly crispy. Remove the garlic onto a paper towel while keeping the infused oil in the pan.

Add the whites of the minced scallion into the hot infused oil. Cook for around 1 minute until soft.

Add the cooked Jasmine rice and soy sauce. Stir until everything is well coated.

Then add the fresh basil and fried garlic. Mix until basil is slightly wilted.
