To be honest with you, breakfast is not my favorite meal of the day. However, this 20 minute breakfast skillet definitely will get me out of bed. This skillet is filled with crispy seasoned potatoes, jammy eggs, and some fresh green onions.
The flavor combinations in this breakfast skillet is what makes it so irresistible for me. It’s the pairing of egg yolk, green onions, cheese and the Frank’s Red Hot that do it for me. Taking a crispy potato on your fork and dunking it in the jammy egg yolk just makes for the perfect bite.
I’ve experimented with different ways to make this skillet and this version is just the simplest and the best. Everyone who has taste-tested this recipe has absolutely loved it.
How to make a breakfast skillet
- Base: You can essentially go in with any sort of potato here. You just want to make sure they’re cooked all the way through and crispy.
- Sweet Potatoes, Idaho Potatoes, Purple Potatoes, Red Potatoes
- Eggs: Eggs are a very personal ingredient as everyone has their preferences. I know plenty of people who would not touch a runny yolk. In that case, you can scramble your eggs, hard boil them or make them “over hard”.
- Veggies: I love a good onion, pepper moment in a breakfast skillet. You can also add chopped spinach, kale or mushrooms.
- Toppings: You need the cheese, but I guess you can choose whatever cheese you want. Green onions are mandatory! They make everything so good, I promise. You can top with any hot sauce of your choice, RedHot is my favorite for this dish.

Breakfast Skillet (20 Minute Meal)

This single serving breakfast skillet is a quick and delicious way to make yourself a special breakfast. It’s filling and satisfying since it’s pack with protein, healthy fats and carbs.
Ingredients
- 1 Medium Russet Potato
- 1/2 Tsp Salt
- 1/2 Tsp Pepper
- 1 Tsp Garlic Powder
- 1 Tsp Smoked Paprika
- 1/4 Red Onion, Chopped
- 1/4 Green Bell Pepper, Chopped
- 3 Eggs
- 1/4 Cup Cheddar Cheese, Shredded
- 1 Stalk Green Onion, Chopped
- 2 Tbsp Olive Oil
- Non-stick Cooking Spray
Optional
- Frank’s Red Hot
Instructions

In a mixing bowl, add in the chopped potatoes, seasonings and 1 tbsp of olive oil. Mix well.

Airfry the potatoes for 10 minutes at 400 degrees.

In a small skillet, sautΓ© onions and peppers in the remaining olive oil. Mix until lightly golden brown.

Once the potatoes are crispy, add them into the skillet with the onions and peppers. Mix well.

Using a small silicone spatula, create 3 small wells for the eggs to sit in. Spray the wells with a bit of non-stick cooking spray.

Add one egg into each well. Season the eggs with salt and pepper, sprinkle on cheddar cheese and cover. Cook for 3-4 minutes on low-medium or until the egg whites are cooked.

Garnish with green onions and hot sauce. Enjoy hot!
