I love to get a little side of cheesy fiesta potatoes from Taco Bell, so of course I had to make them at home. These homemade taco bell copycat fiesta potatoes are so delicious, crispy, and cheesy.
These was a period of time when taco bell took these off the menu (which was devastating), so definitely save this recipe for the future if that happens again. Though this recipe is not authentically Mexican, it is such a yummy recipe to keep on rotation for parties. I love to lay out all of the ingredients and make it a “make your own fiesta potato” bar.
What are Cheesy Fiesta Potatoes?
This is a very popular side dish you can get at the popular fast food restaurant in American called Taco Bell. Cheesy fiesta potatoes come in a small bowl with crispy spiced potatoes, nacho cheese sauce and sour cream. Then, you can take one (or more) of their sauce packets and add it on top for more flavor. This taco bell copycat fiesta potatoes recipe imitates all the tasty flavors the original has.
Main Ingredients
- Red Potatoes: I find that red potatoes hold their shape much better than Russet. This way when you are tossing the potatoes halfway through cooking, they don’t break or mash.
- Seasonings: You can use taco seasonings, but I like to use a few spices to keep the potatoes a bit more simple.
- Cheese Sauce: My cheese sauce recipe is only a few ingredients and does not contain any very processed cheese. It consists of making a roux, adding milk to make the bechamel and then simply adding cheese and seasonings.
- Toppings: I love scallions, sour cream and a chipotle mayo.
How to make Fiesta Potatoes
Prep
- Fully peel the potatoes using a potato peeler. Then wash them thoroughly to remove any remaining dirt. Chop the potato into 1 inch cubes and add into a large mixing bowl.
- Add the olive oil and all of your seasonings to the potatoes and mix well.
3. Shred your cheese using a grater or the grating attachment in the food processor.
Baking Instructions
- Preheat the oven to 400F. A high heat will cook the potatoes while also making them very crispy.
- Add the seasoned potatoes to an unlined, oiled baking tray. Keeping it unlined will also the potatoes to get crispy with the contact of the baking tray.
- Bake the potatoes for 45 minutes and toss halfway.
Cheese Sauce
- Create a roux by whisking together equal parts melted butter and all purpose flour over medium heat. Whisk for around 2 minutes until the flour is slightly cooked.
- By adding in the evaporated milk and whisking, this will create a bechamel sauce. It will be thick and creamy.
- Simply add in the seasonings and shredded cheese and whisk will. Use milk to thin out the sauce if needed.
Top the Fiesta Potatoes
Add the crispy potatoes to a small bowl. Lastly, top with the cheese sauce, scallions and sour cream. (I like to whisk the sour cream to make it fluffy)

Ingredients
For the Potatoes
- 7 Medium Red Potatoes
- 1/4 Cup Olive Oil
- 1 Tbsp Paprika
- 1 Tsp Cayenne Pepper
- 1 Tsp Black Pepper
- 1 1/2 Tsp Garlic Powder
- 1 1/2 Tsp Salt
For the Cheese Sauce
- 2 Tbsp Butter
- 2 Tbsp All Purpose Flour
- 16 Oz Evaporated Milk
- 8 Oz Cheddar Cheese, Shredded
- 1 Tbsp Taco Seasoning
- Milk for Thinning, If needed
For Toppings
- 1/2 Cup Scallions, Sliced
- 1/2 Cup Sour Cream
- Hot Sauce
Instructions
For the Potatoes
- 1
Preheat the oven to 400F.

Peel and cube the potatoes, add them to a large mixing bowl.

For the Cheese Sauce

In a pot, melt the butter. Then, add the flour. Toast for around 2 minutes.

Add the entire can of evaporated milk and whisk well. It will take around 1-2 minutes for the bechamel to start thickening.

Once thickened, add the taco seasoning and shredded cheese. Whisk until combined.

Use milk to thin the sauce out to your liking or keep it thick.

Add the crispy potatoes to a bowl and cover in cheese sauce. Then, top with scallions and sour cream. Enjoy right away!
