Why does this sauce use butter instead of olive oil?
Olive oil is definitely the most popular choice of fat when it comes to Italian cooking. This is very true in the Southern and Central parts of Italy, where they use Extra Virgin Olive Oil to pretty much cook everything.
In the Northern parts of Italy, butter is more commonly used in everyday recipes. The butter in this tomato sauce adds such a great velvety, rich flavor that combats any acidity from the tomatoes.
Why is the onion and garlic removed?
The onion and garlic (not in the original recipe) are removed after their flavors are infused into the sauce. The onion adds some sweetness, but since we remove it, we don’t get the super oniony flavor.
I like to add garlic because I am a garlic girl, but it is not in the original recipe. Feel free to not add this in if you want to stay true to the recipe.

This is my ride or die tomato sauce recipe. It is buttery and lightly sweet, which is perfect when adding it to pasta dishes.
Ingredients
- 1 Can San Marzano Tomatoes
- 1/2 Large White Onion
- 2 Cloves Garlic
- 4 Tbsp Butter, Half Stick
- 1 1/2 Tsp Salt

In a pot, add the whole can of san marzano tomatoes, the halved onion (not chopped, the whole half), 2 whole cloves of garlic, salt, and the 4 tablespoons of butter.

Cover and simmer the sauce for 45 minutes. Stir periodically to prevent sticking.

Once the sauce it fully cooked, remove the whole onions and garlic. Then, mash the whole tomatoes to your preferred consistency. You can also blend it if you want a super smooth sauce.

Adjust the salt to your liking and enjoy with your favorite pasta!
