These garlic mushroom noodles come together in 15 minutes, making it the perfect weeknight dinner. What’s better than a super quick dinner? I dinner that requires minimal ingredients! I love how these noodles only use around 7 ingredients, making them fresh and light.
If you’re a mushroom hater, this recipe is definitely not for you (check out my Vegetable Stir Fry Noodles). The use of shiitake mushrooms makes this noodle dish full of umami flavor. My favorite part of these garlic mushroom noodles is that you can taste each ingredient, the mushrooms, garlic, scallions and even the sauces. That’s what makes limited ingredient recipes so fantastic, it allows you to savor each ingredient added.
Key Ingredients
Shiitake Mushrooms: These are a species of mushrooms that have an earthy, yet meaty flavor. I love using these mushrooms in asian dishes as their flavor pairs so well with asian sauces.
Garlic: I am a garlic girl to my core! Garlic makes any recipe so much more flavorful, making it an essential ingredient in my household. Mincing the garlic fine and sautΓ©ing it in butter gives it a softer flavor.
Scallion: Dare I say scallions are my favorite herb? I love how you can get different intensities based on which part of the herb you use. The white parts are stronger, making them fantastic to throw in while cooking. The greens however, are milder in flavor making them great to garnish with.
Udon Noodles: These a thick and chewy wheat noodles that become soft and plump when cooked. I love the texture of these noodles, especially with the simplicity of the recipe where you can really enjoy the texture.
How to Make Garlic Mushroom Noodles
- Cook your udon noodles based on your package. Different brands will have different instructions. I used these noodles and only had to microwave each pack for 90 seconds. I do recommend rinsing your noodles with cold water to remove any unwanted starches.
- Add your sliced mushrooms onto a dry hot pan. You want the mushrooms to evaporate their water to ensure a chewy mushroom that is not mushy or slimy. You’ll want to cook these until their water is evaporated and they start sticking to the pan.
- Go in with butter, garlic and scallions and cook these until the garlic lightly brown and soft. (This will smell so good)
- Add in your rinsed noodles, drizzle the sauces and toss well. I like to cook these until there is a slight char on the noodles.
- Garnish with scallions and enjoy hot!

Ingredients
- 1 lb Udon Noodles
- 1 lb Shiitake Mushrooms
- 1 Head Garlic, Minced
- 4 Stalks Scallion, Sliced
- 4 Tbsp Butter
- 2 Tbsp Soy Sauce
- 1 Tbsp Hoisin Sauce
Instructions

Cook the udon noodles according to the package.

Heat a large skillet on high and add in the sliced mushrooms. Cook them until their water evaporates.

Turn the heat down to medium and add in all of the butter. Immediately follow the butter with the minced garlic and white of the scallions. SautΓ© until the garlic is lightly golden. This should only take 1-2 minutes.

Add in the cooked noodles, soy sauce, hoisin and then stir together well. SautΓ© for only 1-2 minutes.

Garnish with the scallion greens and serve hot.
