Sometimes I just crave a cold deli sub with all of the veggies, condiments and pickles. This sub recipe, hits ALL the spots. It’s super fresh, perfect for a warm spring day or just a quick throw together during lunch.
I love to eat these right after I make them or let them sit for an hour to get them tasting like they came from the deli.
How do I make subs taste like the Deli?
Simple: Use your meat and cheese from the deli! I’m in Florida so I like to get my cheese sliced at Publix. For this recipe I used Muenster and Pepper Jack. I also recommend letting the subs sit for a little bit to let all of the veggies and sauces marinate together. Thats when you get that super juicy bite.
How do I make Veggie Subs?
- Veggies: (Obviously) Some of my favorite options are:
- Lettuce
- Tomatoes
- Red Onion
- Mashed Avocado
- Cucumbers
- Bell Peppers
- Shredded Carrots
- Alfalfa Sprouts
- Condiments: I am a sauce lover, but Mayo is a must have for me. Some yummy options are:
- Mustard (I use the Trader Joe’s Aioli Garlic Mustard Sauce)
- Chipotle Mayo
- Ranch
- Whole Grain Mustard
- Pesto
- Honey Mustard
- Pickles: A MUST for that delicious tang in subs. My favorites:
- Dill Pickles
- Bread and Butter Pickles
- Pickled JalapeΓ±os
- Pickled Red Onion
- Banana Peppers
- Cheese: You can pick literally any sliced cheese!
Tips
- Toast the bread without cutting it so the outside gets crusty, but the inside gets steamed. This also helps your sandwich not get soggy.
- Add extra cheese. Need I say more?
- Season your tomatoes with salt and pepper to bring out the flavors.

It’s quick to prepare and requires no “cooking”. This recipe is perfect for a barbecue or just to bring to a party. I like to cut them into small, handheld pieces when serving at a party!
Ingredients
- 1 Large Bakery Cuban Bread
- 1 Tbsp Butter
- 1 Large Tomato, Sliced
- 1/2 Red Onion, Sliced
- 1 Avocado, Mashed with Salt
- 2 Cups Lettuce, Shredded
- 1/2 Cup Pickle Chips
- 1/3 Cup Pickled JalapeΓ±o
- 10 Slices Cheese of Choice
- 4 Tbsp Mayo
- 2 Tbsp Mustard
- Salt
- Pepper
- Olive Oil

Preheat the oven to 390F. Butter the entire top of the cuban bread without cutting it open. Bake for 5 minutes or until crusty on top.

Let the bread rest for 5 minutes and the slice open.

Start by spreading the mayo and mustard evenly on both sides. Then add the mashed avocado to the bottom half of the bread.

Start layering the veggies. Tomatoes (add olive oil, salt and pepper), onions, pickles, jalapeΓ±os, and lettuce.

Close the sandwich, cut into however many pieces you want and enjoy fresh!
