Samosa grilled cheese is a modern take on the classic Indian potato and pea samosa. This crispy grilled cheese is filled with spices, cheese and chutney.
Samosas are Indian triangle shaped appetizers typically filled with potatoes and peas, but are found with a variety of fillings. I love the frozen Deep Spinach and Paneer samosas, they’re definitely my favorite.
This samosa grilled cheese is a very different take on the samosa as I created it without the typical pastry-like crust. I just used some delicious sourdough bread and a lot of cheese!
How to Cook Potatoes
As we all know, potatoes come in so many different forms. You can eat them boiled, fried, baked, mashed, etc. For this recipe, you are going to want to just cook the potatoes how ever you like, they just have to be soft. In order to get them cooked, you can either boil, microwave or bake them, here’s how:
The Baking Method
This is a good method if you have some extra time and just want to forget about the potatoes for a little while.
- Start by preheating the oven to 350F. Then rub the washed potatoes with a neutral oil. Bake for 45 minutes -1 hour.
The Boiling Method
This method will get you the most tender potatoes.
- Add the potatoes to a pot and fill it with water. Cover and bring the water to a boil. Once the water is boiling, uncover and cook until fork tender, this should be around 25-30 minutes. Then peel the skin.
The Microwave Method
This is the most time efficient method.
- Wet a paper towel and wring out the excess water. Wrap the washed potatoes with the damp paper towel. Microwave for 7-8 minutes.
- You can also use a Microwave Bag for Potatoes, this way you can skip the paper towel.
Tips for Making the Perfect Grilled Cheese
- Make sure you spread butter around the entire top and bottom of the bread before grilling. This will ensure you get a super crispy grilled cheese. Then, once you eat it, it will have an amazing crust.
- Don’t be stingy with the cheese! I think everyone loves a good cheese pull, so be liberal.
- When you’re grilling the sandwich, don’t press down so much. If you do, you will get a very flat grilled cheese. I personally love a thick grilled cheese.
How to Make Samosa Grilled Cheese
The Filling
- In a pan sautΓ© grated garlic, ginger and onions. Then add the mashed cooked potatoes, all of your spices, peas and cilantro. Cook until the peas are fully cooked through
The Sandwich
- Spread mayo and green chutney on both slices of bread. Add half of the samosa filling and top with sliced pepper jack cheese.
- Spread butter on the top and bottom of the sandwich and grill until crispy.

For the Filling
- 2 Red Potatoes
- 1/2 Small Red Onion, Diced
- 1 Tsp Grated Garlic
- 1/2 Tsp Grated Ginger
- 1/2 Tsp Turmeric Powder
- 1/2 Tsp Cumin Coriander Powder
- 1/4 Tsp Red Chili Powder
- 1/2 Tsp Salt
- 3 Tbsp Frozen Peas
- 1/4 Tsp Garam Masala
- 1/4 Tsp Amchur Powder
- Cilantro, Chopped
- 1 Tbsp Avocado Oil
For the Sandwich
- 4 Slices Sourdough Bread
- 4 Tbsp Vegan Mayo
- 2 Tbsp Green Chutney
- 4 Slices PepperJack Cheese
Instructions
For the Filling

Start by either boiling, microwaving or baking your potatoes. Once cooked, peel the skin.

In a pan, heat avocado oil. Then add in grated ginger and garlic. Once they are fragrant, toss in the minced red onion. Cook for around 2 minutes.

Roughly chop the boiled potatoes and add them to the pan. Sprinkle in all of the spices and seasonings for the samosa filling. Use a fork to mash the potatoes.

Also add in the frozen peas and cook for another 3-4 minutes. Garnish with cilantro.
For the Sandwich

Spread mayo and green chutney on both slices of bread. Then pat down half of the samosa filling on one side of the bread. Top with 2 slices of pepperjack cheese.

Close the sandwich and spread butter on the top and bottom. Grill until golden and crispy.
